At Tom Lawson at The Psalter, the cooking is precise, confident and grounded in place. Set within The Psalter Hotel in Sheffield, the restaurant reflects both the character of the city and the quality of the surrounding landscape — from Wortley Estate lamb and native-breed meats to day-boat fish, foraged herbs and produce grown in Tom’s own kitchen garden.
The menus are guided by ingredients rather than strict seasons, allowing the kitchen to respond instinctively to what is at its best. The result is modern British cooking defined by clarity, depth of flavour and elegant restraint — dishes where every element has purpose.
Chef-Owner Tom Lawson previously owned Rafters, the Sheffield restaurant awarded three AA Rosettes under his leadership. Having built Rafters into one of the region’s most respected dining destinations, Tom now brings that same ambition, experience and long-term vision to The Psalter — where the restaurant is recognised in the Michelin Guide and continues to evolve as a serious culinary presence in the city.

Service is led by F&B Manager Telmo Silva, whose background includes Michelin-starred and five-star hotel environments such as Moor Hall, Whatley Manor and Gravetye Manor. Telmo brings depth of experience and calm assurance to the dining room, shaping a style of service that is polished yet instinctively warm.
Under his leadership, the team focuses on anticipation rather than interruption — attentive without intrusion, confident without formality. The aim is simple: that every guest feels recognised, relaxed and genuinely cared for from the moment they arrive.
The wine offering complements this philosophy. Developed in partnership with House of Townend, the list balances classic and emerging producers, selected for how naturally they sit alongside Tom’s ingredient-led cooking.
The programme continues to be shaped with input from Jonathan Steeper, General Manager of The Ladybower Inn, who remains closely involved in the development of the list. His passion for wine and ongoing studies — alongside Tom — ensure the offering continues to grow in depth and character.
