A memorable experience, made your way.

Fine dining is part of who we are, but we do not believe it has to mean a fixed tasting menu. At Tom Lawson at The Psalter, the preparation, detail and ambition remain at the highest level while the experience is deliberately more flexible. Choose the number of courses that suits your evening, drink the wine you want to drink and leave feeling properly looked after - and properly fed.

We moved away from the traditional tasting-menu format for a simple reason: not every guest wants to dine in exactly the same way.

Our menu lets you choose two, three, four or five courses. A shorter dinner, our recommended four-course experience or the complete five-course menu - the choice is yours. Every option includes seasonal snacks and our house-made bread.

The cooking is precise and considered, but the experience is never meant to feel rigid. This is fine dining with room for the guest.

Cooking built around the seasons.

Tom works closely with Head Chef Gareth "Gaz" Evans to create the restaurant menu. Seasonality leads the conversation: what is at its best, what the kitchen is excited by and how each ingredient can become a complete, memorable dish.

The background is fine dining and the preparation reflects that - careful sourcing, serious technique and attention to every detail. But the result should still feel generous, welcoming and grounded in where we are.

That idea matters. Dinner should be memorable because the food was exceptional and the hospitality felt genuine - not because you spent the evening following rules.

Cauliflower cheese is familiar, comforting and deeply British - which is exactly why it belongs here. Tom's version takes a dish connected to family and memory and gives it the same attention as anything else on the menu.

It says a lot about the restaurant: technique matters, presentation matters and ingredients matter, but food should still make you feel something.

The menu changes with the seasons rather than being tied to a fixed tasting sequence. That gives the kitchen freedom to work with ingredients at their best and gives guests freedom to build a dinner around the dishes they most want to eat.

We want every course to feel complete in its own right - beautifully prepared, properly satisfying and worth remembering.

Just seven tables

Intimate by design.

With only seven tables available in the main restaurant each service, the dining room feels personal from the moment you arrive.

The scale gives our kitchen and front-of-house teams the opportunity to pay proper attention to every table while keeping the atmosphere relaxed rather than formal.

Main restaurant tables are available for up to six guests. Larger groups can be looked after in our lounge/private dining room.

A curated wine list

Wine chosen for the food - and for you.

Our wines by the glass evolve alongside the menu so there is always something considered to pair with the food. But there are no rules: the best wine is ultimately the one you enjoy drinking.

The aim is knowledgeable, confident service without making wine feel complicated. Ask us for a pairing, explore something new or simply order a bottle you already love.

Wine knowledge in the room General Manager Jonathan Steeper is a qualified sommelier, while Tom Lawson and Leala both hold WSET Level 2.
Dining with a larger group?

Private dining & larger tables.

For groups beyond the size of our main restaurant tables, our lounge bar also serves as our private dining room.

The space can accommodate groups of 8-20 guests and gives us more flexibility for celebrations, business dinners and larger restaurant parties.

Depending on the service and the occasion, it can be arranged for a private event or used as additional dining space. This means larger parties can enjoy the same Psalter hospitality without every booking needing to become an exclusive hire.

Before you dine

When is Tom Lawson at The Psalter open?

The restaurant serves dinner Thursday-Saturday, with reservations available from 6:00pm-8:00pm.

Do I have to choose a tasting menu?

No. The restaurant is deliberately designed around choice. Guests can select two, three, four or five courses from the seasonal menu, with snacks and house-made bread included.

Can I book for a larger group?

Main restaurant tables are available for up to six guests. For larger groups, our lounge/private dining room can accommodate parties of 8-20 guests, subject to availability and the style of booking.

Is private dining available?

Yes. Our lounge bar also serves as our private dining room and can host groups of 8-20 guests. It can be used privately for suitable bookings or more flexibly as additional dining space for larger parties.

Can you accommodate allergies and dietary requirements?

Please provide at least 72 hours' notice of allergies, intolerances and dietary requirements where possible. We take reasonable precautions and will always try to accommodate guests, but we cannot guarantee an allergen-free environment or eliminate all risk of cross-contamination.
