Tom Lawson at The Psalter is a restaurant built on precision, generosity and genuine hospitality — a modern British dining experience shaped by confidence, care and character.

The Food & The Chef

At Tom Lawson at The Psalter, the cooking is precise, confident and grounded in place. Set within The Psalter Hotel in Sheffield, the restaurant reflects both the character of the city and the quality of the surrounding landscape — from Wortley Estate lamb and native-breed meats to day-boat fish, foraged herbs and produce grown in Tom’s own kitchen garden.

The menus are guided by ingredients rather than strict seasons, allowing the kitchen to respond instinctively to what is at its best. The result is modern British cooking defined by clarity, depth of flavour and elegant restraint — dishes where every element has purpose.

Chef-Owner Tom Lawson previously owned Rafters, the Sheffield restaurant awarded three AA Rosettes under his leadership. Having built Rafters into one of the region’s most respected dining destinations, Tom now brings that same ambition, experience and long-term vision to The Psalter — where the restaurant is recognised in the Michelin Guide and continues to evolve as a serious culinary presence in the city.

With just 32 covers, the dining room feels intimate and personal. Service is unhurried, generous and genuine — because while the cooking continues to grow in refinement, it is hospitality that remains at the heart of everything.

Service & Wine

At Tom Lawson at The Psalter, hospitality sits at the heart of the experience.

Service and wine pairing are led by Operations Manager Jonathan Steeper, with a focus on warmth, precision, and ease.

The team delivers service that is attentive without intrusion, and polished without pretence — always rooted in our signature approach to hospitality. The aim is simple: for every guest to feel recognised, relaxed, and genuinely cared for.

The wine programme, developed in partnership with House of Townend, complements this philosophy. The list balances classic and emerging producers, chosen for how naturally they sit alongside Tom’s ingredient-led cooking.

Continuously shaped with input from Jonathan — whose passion for wine and ongoing studies, alongside Tom, bring added depth and momentum — the offering evolves with intent and character.

Whether enjoyed as a full pairing or a single glass, wine is presented as part of the wider experience: thoughtful, guided, and always selected to enhance the table.
